This simple salad is easy to make and great on it's own, but you can mix it up by adding any other veggies you have on hand!

Arugula Cucumber Salad with Lemon Dressing

Adapted from Elena’s Pantry

Ingredients:

  • 5 ounces arugula
  • 3 medium cucumbers, quartered horizontally, then cut into cut 1-inch pieces
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/8 tsp sea salt
  • Optional: Avocado, cherry tomatoes, red onion, chickpeas, pine nuts

Directions:

Dice the cucumbers then combine all ingredients in a large salad bowl.
