Simple Veggie Stir-Fry

Adapted from The Roasted Root
Serves 1-2

Ingredients:

  • 1 tbsp olive oil or coconut oil
  • 1 large carrots, diced
  • 1 small crown broccoli, chopped into florets
  • 1 cup red cabbage, sliced
  • 1/2 medium-sized onion, chopped
  • 1-inch piece of fresh ginger, peeled and grated
  • 2 tbsp coconut aminos
  • 1/4 tsp sea salt to taste

Directions:

  1. Heat the oil over medium heat in a pan.
  2. Add onions, carrots, broccoli and cabbage. Stir well and cover. Cook for about 5 minutes, until veggies become soft, stirring occasionally.
  3. Remove cover and add remaining ingredients. Replace cover and cook an additional 2-3 minutes, stirring occasionally, until vegetables reach desired doneness.
  4. Serve vegetables with your favorite entrée.
